If you've never had this before, you're probably thinking the same thing I did before I tried it- that sounds weird.  You're right, it is!  I first had this dish when my sister made it last fall- it was delicious!  When it came to being dubbed "a salad"- not so much.  My Mother-In-Law made this version on Saturday and changed up the recipe a bit.  It's a touch healthier but still oh-so-tasty!

POPCORN SALAD (revised)

2 Cups chopped celery

1/2 cup chopped white onion

2 small cans water chestnuts (cut into slivers)

2 Cups shredded cheddar cheese

1/2 crumbled bacon (crisply cooked)

3 to 4 cups chopped Iceberg Lettuce

1 cup Frozen Peas (thawed)

6 oz. Old Dutch Gourmet White Popcorn

DRESSING:

2 Cups Mayo (I used light olive oil mayo)

2/3 Cup Sugar

3 TSP Vinegar

Directions:

Place all ingredients in bowl but the bacon, chopped lettuce, popcorn.  Add the last 3 items just before serving as you stir the dressing into the salad.
