Yesterday- I asked you to send me your "can't miss" recipes for Super Bowl Sunday.  Thanks to each of you who submitted something- here they are...

*Matt’s Kick Ass Chili

Ingredients

1 lb lean ground beef

1 can unsalted sweet corn

1 can water

1 small onion

1 green pepper

1 can Chili Ready Tomoatos

1 can Chili Beans

1 tsp Cumin

2 tsp Chili Powder

1 tsp black pepper

3 squirts of ketchup

Liquid smoke

Franks Red Hot

To Prepare:

Dice the onion and green peppers up real nice. Put them in the frying pan and sautee them. Place them in the crockpot.

Brown the hamburger and add some liquid smoke once it’s getting browned. Place in crock pot.

Strain Corn, place in crockpot

Add Tomatos, cumin, chili powder, black pepper, and ketchup add beans last with 1 can of water

Mix it all up!

Add some Franks Red Hot as desired.

Cook until hot.

Best served with Saltines, Shredded Cheese, and a little Sour Cream on top.

BLT PIZZA

Ingredients:

-Boboli Pizza Crust (pre-made)

-Olive Oil

-Cherry Tomatoes, cut in half or fourths

-Bacon Pieces (I get mine from Costco, pre cooked bacon pieces)

-Shredded Mozzarella chesse

-Shredded Lettuce

-Regular or Light Mayo

To Prepare:

**Preheat oven to 450 degrees.  You'll be following the baking directions on the Boboli Pizza Crust Package.  Drizzle olive oil on crust.  Make sure it's spread evenly.   You really won't need a ton because it spreads.  Evenly, scatter bacon pieces and tomato pieces on the crust.  Top with whatever amount of mozzarella cheese you like.  To keep it on the healthier side, I only use a little.  Bake per the instructions on the package (I believe it is 10-12 minutes).  While the pizza is baking, place the shredded lettuce in a mixing bowl.  Mix in about 2-3 tablespoons of Mayo (Reg. or Light).  Mix the mayo in with the shredded lettuce.  You can modify the amount of mayo you would like to use.  You really just want to lightly coat the shredded lettuce. Once the pizza is done, remove from oven.  I like to let it sit for a minute or two because it is easier to cut then.  Cut into desired slices.  Top with the shredded lettuce/mayo mix.  Serve!

SERIOUSLY AMAZING!!! On the plus side too there are many ways to keep it healthier.  You can use the wheat Boboli crust, light olive oil, light mayo, turkey bacon (not a fan but it's healthy) and a small amount of cheese!

"Crack Dip"

 Ingredients:

*1 lb of Jimmy Dean Sausage Original

*1 can of Rotel- Diced Tomatoes and Green Chillies

*1 brick of Philadelphia Cream cheese

 To Prepare:

Cook Jimmy Dean Sausage until no longer pink

Mix together cooked sausage, Rotel and cream cheese in crock pot. Cook on high for 1-2 hours until warm. Eat with Fritos Scoops.

*Serves about 6 people. Double the recipe for a double batch.

CUBED CHEESE WRAPPED IN BACON

Hold together with sturdy toothpick. Deep fry to your liking.  The trick is to wrap the bacon well enough so that the cheese doesn't to melt out!!

BUFF DIP:

*I'm stealing this one from my Brother-In-Law, Critter.  (Here you go, Katie!)

Ingredients:

4 Blocks Cream Cheese

2 Big Bags of Shredded Cheddar Cheese

60 oz bottle of Ranch dressing

1 Bottle of Frank’s Red Hot Sauce

4 large cans of chicken

 To Prepare:

Place all ingredients in a pot on stove.  Let melt, stir together and heat through.  Serve in crock pot.  Use celery sticks and chips for dipping.
